With every wedding we help plan, the one common request has always been to do something different, something that the guests will remember and talk about for years to come. And we love introducing our clients to new trends that bring a smile to their faces.

One of our favourite wow-factors is the new trend currently making inroads in India, of molecular gastronomy. Molecular gastronomy is a culinary innovation, where food scientists study the chemicals and reactions that go into cooking, and come up with unique new ways of mixing ingredients with experimental and never seen before dishes. They work with equipment that might look right out of a chemistry lab, and produce food that is a new experience in itself, a burst of visuals, flavours and drama appealing to all your senses!

With the cult following obtained by Master Chef, the Indian culinary scene is soon becoming more and more about presentation followed by unique flavour and texture combinations. And molecular gastronomy offers all of that and so much more!

Imagine spoons carrying soup bubbles which burst in warm flavours in your mouth. Cocktails letting out colourful smoke as you sip them. Ice spheres carrying unique cocktails which need to be cracked in your glass. Mushroom soup prepared in the form of tea in front of your eyes, complete with truffle powder that looks like sugar. A globe of potato shreds that ends up tasting like the most amazing chaat you've ever had. Paan flavoured candy floss served at the end of the meal. And mishti dahi palette cleansers offered between courses.

A few Indian restaurants and chefs have started specialising in molecular gastronomy, some of whom also offer catering services. While it might not be practical to have the entire food menu based on molecular gastronomy, having one special counter serving select dishes would be ideal. But do remember, molecular gastronomy is as much about the theatrics and wonder as it is about the amazing new tastes, and the preparation and presentation require time. So if your wedding has a large number of guests, you might have to set up multiple counters to ensure everyone is able to experience the histrionics about to unfold for them. Such counters are definitely must-haves for classy cocktails, and go very well with themed events.

While the portions are usually measured, the play of flavours on your guest's taste buds will leave them in awe and wonder, with a blissful taste and experience they won't really be able to describe in words!
